Apricot Chicken Salad Cups

Ingredients (Makes 2 quarts)

  • 2 Jars Bonne Maman® Apricot Fruit Spread
  • 2 Each Chicken breast, cooked and diced into large pieces.
  • ½ Cup Celery, diced small
  • ½ Cup Radish, diced small
  • ¼ Cup Cucumber, diced small
  • 2 each scallion, coined
  • ½ Cup Mayonnaise
  • 2 Tbsp. Whole grain mustard
  • 2 Tbsp. Apple cider vinegar
  • 2 Tsp. Salt
  • 1 Tsp. Black pepper, ground
  • 1 Head butter lettuce, leafed into cups

Directions

In a large mixing bowl, combine mayonnaise, vinegar, mustard, and 4 tablespoons of Bonne Maman® Apricot Fruit Spread – More Fruit, Less Sugar*.

Combine chicken, cucumber, radish, scallion, and celery with the mayonnaise dressing.

Season with salt and pepper.
